Figuring It All Out As We Go!

Hello Neighbors,

This week I'm giving you a special recipe of blackberry love. 

Recently I was catching up on episodes from my favorite show, Shark Tank. As usual they showcase bright-eyed entrepreneurs with great ideas, and some not so great; but nonetheless, the people are passionate and believe in their product or idea. 
On one particular episode I came across a Kodiak Cakes, and I knew I had to try for Pancake Talk Tuesday. I was really interested since they stated the mix was 100% whole grain no added fat and it tastes great. I was surely open to that.  I ran to my local Target and purchased two boxes: Whole Wheat Oat & Honey Frontier Flapjack and Waffle Mix and Buttermilk & Honey Frontier Flapjack and Waffle Mix.  For this recipe I used the Buttermilk & Honey. I must admit for a girl who loves to do everything from scratch, to just add water to the mix I was pleasantly surprised. The Waffles were delicious! I must admit I am a fan and would purchase this product again. You know your Girl has to reenergize her 60 Day challenge, this would definitely help keep me on track!

The mix is,  100% whole grain wheat flour, 100% whole grain oat flour, non-fat sweet cream buttermilk, dried honey (honey, wheat starch), leavening (sodium bicarbonate, monocalcium phosphate), natural vanilla, egg whites, sea salt. I love the show Shark Tank, it really allows you to see insights on an entrepreneurs thought process and passion. It's a beautiful thing observe someone discovering and producing their purpose.

The recipe this week Blackberry Butter Cream & Buttermilk & Honey Frontier Flapjack and Waffle Mix


1 Cup of Blackberries
1/4  Cup of Cream Cheese (Philadelphia Honey Cream Cheese)
1/4 Cup of Whipped Butter
1 Tablespoon of Powdered Sugar

*Butter and Cream Cheese should be room temperature
*Choose the softest blackberries, there easier to break down
* You can choose to use a mixer or mix by hand.

1. In a a bowl add the Butter, Cream Cheese, and Sugar
2. Mix until smooth
3. Add Blackberries, (Fold in with a Silicone Butter Spatula)
4. Add more Powder Sugar to taste (Depends on the sweetness of     
the berries)

*Note you can add more butter or cream cheese for desired use. Great on bagels, waffles, and english muffins.
