This week on Pancake Talk Tuesday, we've brought Friday to Tuesday. Jamal of Cinq à Sept Friday, has delighted us with hot topics and some great advice on how he overcomes adversity in his life. 

This week we both shared how we have overcome adversities in our lives. No matter the ups or down, we are learning to keep it moving. Tomorrow, will never repeat today, you have to stay positive and move forward with life. We both understand that adversity can be more than just one difficulty or setback. Adversity can be seen as a series of difficulties or misfortunes that keep you from achieving your goals and finding happiness. So how do you overcome it? You may think that all of the advice out there about overcoming adversity is easier said than done, but in reality, you too can overcome adversity if you cultivate the right attitude and take the steps to get what you want and deserve. Whether we like it or not, adversity is part of life. Overcoming adversity is one of the biggest hurdles we face. As Havelock Ellis wrote, "Pain and death are part of life. To reject them is to reject life itself."

Problems, large and small, present themselves to us throughout our whole existence. Regardless of how sharp, clever, or happy-go-lucky we are, we will encounter struggle, challenges, difficulties and at times, heart wrenching moments.

Blueberry Lemon Pancakes


Pancake Batter

1 cup all-purpose flour, (spooned and leveled)
2 tablespoons sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 cup milk
2 tablespoons unsalted butter, melted, or vegetable oil
1 large egg
1 tablespoon vegetable oil

1 cup Fresh Blueberries
2 tbs of Lemon Extract

Preheat oven to 200 degrees; have a baking sheet or heatproof platter ready to keep cooked pancakes warm in the oven. In a small bowl, whisk together flour, sugar, baking powder, and salt; set aside.
In a medium bowl, whisk together milk, butter (or oil), and egg. Add dry ingredients to milk mixture; whisk until just moistened (do not overmix; a few small lumps are fine). 
Add Lemon Extract and Blueberries
Heat a large skillet (nonstick or cast-iron) or griddle over medium. Fold a sheet of paper towel in half, and moisten with oil; carefully rub skillet with oiled paper towel.
For each pancake, spoon 2 to 3 tablespoons of batter onto skillet, using the back of the spoon to spread batter into a round (you should be able to fit 2 to 3 in a large skillet).
Cook until surface of pancakes have some bubbles and a few have burst, 1 to 2 minutes. Flip carefully with a thin spatula, and cook until browned on the underside, 1 to 2 minutes more. Transfer to a baking sheet or platter; cover loosely with aluminum foil, and keep warm in oven. Continue with more oil and remaining batter. (You'll have 12 to 15 pancakes.) Serve warm, with desired toppings.

Best Broccoli Salad

As Promised... Signed Sealed and delivered The Best Broccoli Salad every!!

8 ounces beef bacon ( If you cannot find use pork)
Salt /Pepper
Onion Salt5 cups small broccoli florets

1 cup mayonnaise 
1/4 cup of sandwich dressing

1 tablespoon cider vinegar 
1/4 cup of red wine vinegar
squeeze a half of lemon juice

1/3 cup chopped onion
1/4 cup of red bell pepper
(sometimes I use 
pimentos if pepper not available)
1/4 cup sugar
3/4 cup raisins 
3/4 cup of dried cranberries

1/2 cup sunflower kernels
8 ounces sharp Cheddar, shredded 
1/2 cup halved cherry tomatoes 
1 cup of shredded carrots

Clean and Trim any leaves from and broccoli stem. Remove the tough stalk ( I sometimes add a little it I'm running low on flowrets). Cut the flowerets off and and a little of the stalk. Make sure its bite sized pieces, Place in a large bowl. Add the crumbled bacon, onion, raisins, and cheese. In a small bowl, combine the remaining ingredients, stirring well. Add to broccoli mixture and toss gently. Garnish with your left over carrots, cranberries, and raisins.

Please try this at your next party. Perfect for an office gathering or over to your neighbors.  Its the best of both worlds tangy and sweet. The non-meat and meat lovers alike will love this dish. Hit a home run this summer with this dish!
